WHOLE WHEAT PANCAKES

2 1/2 cups whole wheat flour                                         1-1/2 teaspoon salt

4 teaspoon baking powder                                             2 eggs, beaten

6 tablespoon brown sugar                                              2 cups milk

6 tablespoon salad oil

              Sift together flour, baking powder and salt; combine eggs milk, brown sugar and salad oil, and add to dry ingredients all at once, beating until smooth.  Honey can be used in place of brown sugar.  Recipe makes about 16 pancakes.

  

EASY WHOLE WHEAT WAFFLES

 2 cups whole wheat flour                                              2 cup milk

3/4 teaspoon baking powder                                          4 teaspoon vinegar

1/2 teaspoon salt                                                         1/4 cup butter, melted

1/2 teaspoon baking soda                                              2 eggs, beaten

2 tablespoons brown sugar

              Sift together flour, baking powder, salt, and baking soda. Combine brown sugar, milk, vinegar, and melted butter; mix well into flour mixture.  Stir in beaten egg. Cook on greased waffle iron.

  

QUICK COFFEE CAKE

 

2 cups white whole wheat flour                                      1/2 cup cornstarch

4 teaspoons baking powder                                           1/2 teaspoon salt

6 tablespoons shortening                                               2/3 cup sugar

2 eggs                                                                         1-1/3 cup milk

1 cup applesauce                                                           2 tablespoons butter

1 cup brown sugar                                                          2 teaspoons cinnamon

            Preheat oven to 425 degrees.  Grease and flour 9”x13” baking pan.  Beat shortening with electric mixer until creamy.  Slowly add sugar to shortening beating until fluffy.  Add eggs and milk; mix well. Add applesauce and mix well.   Sift together flour, baking powder and salt.  Add flour mixture to shortening mixture mixing with wooden spoon until dry ingredients are completely wet.  Pour into prepared baking pan.  Melt butter in saucepan over low heat.  Mix brown sugar and cinnamon until well mixed.  Add melted butter.   Sprinkle over batter in baking pan.  Bake coffee cake for 25 minutes or until golden brown.
