Applesauce Cake

2 cups whole wheat flour                                              1-3/4 cups sugar

1-1/2 teaspoons baking soda                                         1-1/2 teaspoons salt

1/4 teaspoon baking powder                                          3/4 teaspoon ground cloves

1/2 teaspoon ground allspice                                          2-1/4 cups applesauce

1/2 cup water                                                               1/2 cup shortening       

2 eggs                                                                         1 cup raisins

1/2 cup chopped walnuts

            Heat oven to 350 degrees. Grease and flour oblong pan, 13x9x2 inches, or two round layer pans, 8 or 9x1 ½ inches. Beat all ingredients in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minuets. Pour in to pans. Bake until wooden pick inserted in center comes out clean, oblong 60 to 65 minutes, layers 50 to 55 minuets; cool. Frost if desired.

 

Apple Strudel Cake

3 cups whole wheat flour                                     2 cups sugar                 

5-6 apples                                                         1 cup oil

4 eggs                                                               2 tbsp cinnamon

3 tsp vanilla                                                       1 tsp salt

5 tbsp sugar                                                       1-1/2 cups orange juice            

            Cut apples in to thin slices then sprinkle with cinnamon and sugar; set aside.

Mix ingredients until smooth. Grease and flour bunt pan very well. Add ½ of the batter into the pan. Then put the apples in the pan finish filling pan with batter. Pre-heat oven to 350 degrees. Cook for 60-75 minuets.

 

Whole Wheat Chocolate Chip Cookies

       2/3 cup shortening                            1 ½ cups white whole wheat flour

      2/3 cup butter or margarines                1 cup all-purpose flour

      1 cup granulated sugar                          1 tsp. soda

      1 cup brown sugar (packed)                   1 tsp. salt

      2 eggs                                                 1 pkg. (2 cups) milk chocolate chips       

      2 tsp. vanilla                                                        

Heat oven to 375° F.  Mix shortening, butter, sugars, eggs, and vanilla thoroughly. Measure flour by fluffing it first than spooning into measuring cup and leveling off. Stir dry ingredients together; blend in. Mix in chocolate chips. Roll dough into balls about 2” in diameter. Space about 2” apart on an ungreased baking sheet. Bate 8 to 10 min., or until delicately browned. (Cookies should still be soft.) Cool slightly before removing from baking sheet.

Makes about 3 doz. cookies.

 

Chocolate Cake

1 1/2 cups sugar                                                                     3 tablespoons coca powder

1/2 cup shorting                                                                      1 teaspoon soda

2 eggs                                                                                    ½ teaspoon salt

1 cup all-purpose flour                                                              1 cup whole wheat flour

2 cups sour milk or buttermilk                                                   ½ cup boiling water

 Cream together sugar and shortening.  Add eggs and mix well. Mix flours, soda, salt and cocoa.  Add flour mixture alternately with 2 cups milk.  Beat for 1 minute.  Add ½ cup boiling water and mix well for 2 minutes.  Pour into greased and floured 13x9x2 pan.  Bake at 375 degrees for 25-30 minutes.

Chocolate Frosting

1/4 cup margarine                                   1/4 cup milk

2 ½ tablespoons cocoa                            4 1/2 cups powdered sugar

Melt margarine in a small pan.  Turn off heat.  Add cocoa until mixed well.  Slowly add 2 cups powdered sugar mixing well.  Beat in milk and remaining powdered sugar.  Beat until creamy and smooth.  Spread on cake.
